Steel roller mills operate at very high RPMs. That speed generates enough friction heat to change the flour — volatile aroma compounds evaporate, and delicate B-vitamins begin to degrade. A traditional stone chakki turns slowly, keeping the flour cool as it grinds.
Bran stays with the grain
Stone grinding embeds the bran and germ back into the endosperm rather than sifting it out. That means more fibre, more minerals, and a richer flavour in every bite.
